Cold strawberry and savory soup with apple

God has brought us summer and with it came upon us warmer winds. It’s the time for fruits to grow and ripen. Are you looking for something fresh to serve for your lords and ladies? Try for some cold soup! 

What you would need to please four of your masters: 

  • 250 grams of well ripened strawberries
  • One green apple.
  • One bottle of red wine (Bergerac wine will serve well).
  • One (soup)spoon full of citron juice.
  • One (soup)spoon full of savory.

How to make this delicious dessert: 

  1. Wash, stalk and dry the strawberries.
  2. Heat the red wine, add the lemon juice and let the juice reduce by a third of its volume.
  3. Pour the mulled wine over the strawberries.
  4. Poach the fruit for five minutes, remove the strawberries using a skimmer.
  5. Mix the strawberries with the savory and let stand in a cool place for at least 24 hours.
  6. On the day of service, wash and cut the apple into small cubes, then pass it quickly in lemon juice so that it does not darken.
  7. Place your soup in a cup and place your apples. Sprinkle with a little savory. Serve immediately after this.
